Chocolate Shortbread

I was experimenting today with this recipe
and finally got these yummy shortbreads done.
Don't they look good?  Would you like the recipe?
These tasted so good with a cup of coffee this afternoon.
Chocolate Shortbread with Simple Chocolate Icing
1/2 cup (1 stick)Butter
3/4 cup Flour
1/2 cup Powdered Sugar
3 Tbsp. Cocoa Powder
Preheat oven to 300 degrees. Mix butter with blender until butter is creamy.
Chill dough for 10 minutes.
Pat dough into an ungreased 8 inch pie pan. Press edges down with the tines of a fork.
Bake until firm, about 30 minutes.
Immediately after pulled from oven, score into wedges. Cool completely before transferring to plate.
Once cooled,
Frost half way up the shortbread with your
favorite simple icing and sprinkle with nuts.
Chocolate Simple Icing
1/4 stick butter, softened
1 cup Powdered Sugar
3 Tbsp. Cocoa Powder
4 Tbsp. Milk (or more if needed)
1 tsp. Vanilla
Nuts, if desired ( I used pecans)
Combine all icing ingredients (excepts for the nuts) and mix till desired consistency.
Enjoy!!

What a beautiful way to cut up the shortcake, and chocolate on chocolate (yummy).
Keep cooking Momma!!

Yes, they look good, and yes, I want the recipe. I wish I had already seen this and made them earlier.. because I am in bed now, and all is quiet, and I would delight in a cup of tea and one of those shortbread cookies. I guess it is just as well, because I have already brushed my teeth... but still it is a happy thought. I might have to make these later this week.. I think Luke would love them.

Love ya,
Pam
