Oatmeal Cranberry White Chocolate Delights





I got this recipe off the back of a Craisins bag a long time ago and keep adding new flavors to change it up a bit. Every time I make these, I tweak the recipe with a new added ingredient, so they never taste the same twice.  Be bold and be creative!!

Oatmeal Cranberry White Chocolate Delights
 
You will need:
 
2/3 cup butter
2/3 cup brown sugar
2 eggs
1 1/2 cups oatmeal (I use half quick and half old-fashioned oats)
1 1/2 flour (I do half white, half wheat flour)
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. almond extract
1/2 bag (3oz.) dried cranberries
1 cup white chocolate chips
1/4 cup chopped pecans
 
Preheat oven to 375 degrees. Using an electric mixer, beat butter and brown sugar in a large bowl. Beat until light and fluffy. Add eggs and almond extract, mix well. Combine the oats, flour, baking soda and salt. Mix until well combined. Add in the dried cranberries, white chocolate chips and pecans.  Drop by rounded teaspoons onto an ungreased cookie sheet. Bake for 10 to 12 minutes or until golden brown.  Makes about 3 dozen cookies.
 
 
Another thing that I have added to these are a handful of coconut and then I have drizzled a simple butter frosting over the tops.  These are great to give as a gift or to hide them for yourselves. They aren't real sweet, so you shouldn't feel guilty eating more than one. I always keep mine in the freezer for they seem to last a bit longer and they stay fresher.

Hehehe I love how you always tweak it! And mmmmm these sound good! Your posting always get me out of my chair and wanting to pull out my baking ingredients! I think I am going to keep a list of all the things I want to taste when I see you next hehehe :)

These sound good Amy. I love all the variations you do. I have a tendency to do things like that too; it is where great creations are born I think. I bet the ones with coconut and frosting taste really yummy. These will go good on my holiday baking list.

Mmmmm Amy, I think these sound and LOOK scrumptious. I like that you freeze yours. When I remember to do that I am always thanking myself later ;)
I am so excited about Berry making you a island for your kitchen!! Your kitchen is so sweet and I am excited to see it when it is finished.
I can't wait to get one, some day Lord willing. My pictures of my food on the painted white wood is just an old cutting board I painted for pictures. I don't have much light in my kitchen so I take my food upstairs where better lighting is.

I am always tweaking recipes and I'm often teased about it! These days, I try to make recipes a bit healthier by substituting sugar with other sweeteners like unpasteurized honey or stevia. My husband needs to monitor his blood glucose levels and we have found that honey doesn't raise his blood sugar levels!

I must try this because oatmeal cookies are hubby's favourite.
