Sweet and Tangy Cucumbers

 
 
This has got to be one of my hubby's favorite side dishes.
He even loves this for a nice refreshing snack.
 
This was also one of my dad's favorites and so his easy recipe has become one of our best memories from within the kitchen!
 
Isn't it amazing how a certain food triggers memories from your childhood?!
 
 
In order to make this yummy recipe,
You Will Need:
 
 
Sweet And Tangy Cucumbers
 
 2-3 cucumbers, peeled and sliced
1 small red onion, thinly sliced
1-2 garlic cloves, chopped fine
1-2 tsp. freshly ground Cayenne (store bought is fine too)
Salt and Pepper to taste
1 1/2 cups Vinegar
2 1/2 cups Water
2 Tbsp. Olive Oil
1/2 cup Sugar
 
In a large bowl, Stir the vinegar, water, oil and sugar. Mix well.
 Add in the garlic, cayenne, salt and pepper.  
Pour liquid mixture over your cucumbers and onions.
This tastes better if you keep in fridge and let the flavors marinate overnight.
 
Another thing to try is putting a few hard boil eggs in whole with the cucumbers
 and or for extra heat add some jalapenos.

I am needing a good cucumber recipe. This looks really good; I think Steve would love it. They Cayenne in it sounds like it would have a little bite (which he likes).
The grasshoppers got all of my cucumbers this year, but I am going to go to the farmer's market to get some; I bet you all got a good batch in your green house? Have a great day Amy.

Hi Amy! This looks like such a good summer dish, and how fun that it's a family recipe! I might take the cayenne pepper out though, not much for the hot stuff. Love the garlic though!
