No Yeast Cinnamon Rolls...



I am either getting bolder and more creative
 in my baking adventures 
OR.....
Nope, no OR,  I'm just getting bolder and braver to try new things!

I have been having some tummy troubles
 when I eat yeasty breads,
so I have been trying different methods for my bread baking to either 
add just a little yeast or omit the yeast all together.

So, I got on my trustee Google and started researching yeast free breads and such 
and then  of course, I always have to tweak the recipe to my liking, shocking I know.
And, after many hours of searching, I came up with this easy no yeast cinnamon roll.

The dough reminds me of a very rich fluffy pastry dough 
and of course it's got a healthy spin on it too!
Tis a New Year for eating a bit more healthy!

Okay, I think I have rambled on a bit too much here 
So.... Here's the recipe

No Yeast Cinnamon Rolls

2 c. flour ( I used 1c. white, 1c. whole wheat)
2 Tbsp. Coconut Palm Sugar
4 tsp. baking powder
1 tsp. salt
3 Tbsp. butter, slightly softened
3/4 c. milk

Filling:
4 Tbsp. butter, slightly softened
1 c. dark brown sugar
3 tsp. cinnamon
Mix the filling mix together, until they form into crumbles.

Glaze:
(Completely Optional)
1/2 c. powdered sugar
1/4 c. milk

Preheat oven to 400 degrees. Lightly grease a 9x13 pan.  
Sprinkle 1/2 the filling mixture into lightly greased pan.  Set aside.

In large bowl mix in the flours, sugar, baking powder and salt. Cut in the soft butter. Stir in the milk to form a soft dough.  Roll out dough on a lightly floured surface. 
Roll into a rectangle and about 1/4 inch thick.

Spread filling on the dough. Gently roll up dough and cut into 12 slices.
Place in your pan and bake for 20-25 minutes or until golden brown.

Once cooled, drizzle on your glaze.

These look really good Amy. Steve is the same way about yeast; it bothers him as well. It is wonderful to have some alternatives. Thanks for sharing. I look forward to trying them soon.

Has your wind stopped blowing yet? Ours didn't get quite as bad as yours.. I went into town yesterday evening and it was brown out just before I got to town. Hey, I was thinking, would you feel like coming over for Valentines Day?(and of course it would be your birhday too.) I was thinking of doing a little party with you, Rox, and maybe Missy while Elizabeth was here.. and all of the boys.. what an invite Ha?... comment on a blog; oh well, I'll call you about it.

I have a post scheduled for Thursday for pastry cinnamon roll.
I think many people have trouble with yeast because we eat so much of it! I absolutely love your new background! Hey, thanks for the compliment on my new blog look!

These are interesting, I may try them one day. I've made a few $ selling my cinnamon rolls. Folks do love a good cinnamon roll, don't they?
