Mini German Pancakes...


Since Valentine's Day is fast approaching...
I thought it would be nice to share this quick and simple recipe with you all.

I love trying new recipes and if you have noticed above,
  I love anything with cherries on it!

It's also red and red goes great with Valentine's Day!

You can of course use any other fruit on yours
 if you don't really like the cherries.


And now for the recipe....

Mini German Pancakes

1 c. milk
6 eggs
1 c. flour
1/2 tsp. salt
1 tsp. vanilla
1/4 c. butter, melted
1 can of fruit of your choice

Preheat oven to 400.  Blend the first five ingredients in your blender.
Be sure to smooth out any of the lumps.  Blend in the melted butter a little at a time.
Grease muffin tins well and fill less than half way full. 
 Don't over fill it, or they won't puff and then sink.
Bake for 15 minutes or until puffy and golden on the top.
Once you take out of oven, the crater will form on it's own.

Add your favorite topping to the pancake and
 dust with some powdered sugar.

Yields about 12-18 depending on the size.

This is a perfect breakfast to start your 
Valentine's Day with your Sweetheart!

I love, love, love German pancakes! I love how easy it is to make, just blend the batter, dump into a pan and bake. Voila! Perfect every time, and soo yummy with butter, fresh lemon juice and powdered sugar..

Hi Amy! These look so good! And not too big either. I remember going to a Pancake House when we were young. Some people would order the "German Pancake" and it was as big as your head! Our eyes were like saucers looking at it.

Yummy in my tummy! I think I will make these tomorrow for my husband and son. Sweet hubby had an early morning (left at 4:30 am) for work so we don't usually do breakfast that early :)

These looks so good - do you think these could be frozen and eaten later. My husband doesn't like sweet foods but I do and i can't eat all 12-18 of them (well, I could but it wouldn't be a good idea!!).
