Angel Eggs...

Who here loves Deviled Eggs?
Well, we do but we call them "Angel Eggs"

Why should we give the devil credit for something so yummy?

We don't and shouldn't!!

So, when you go to make these the next time,
tell everyone they are Angel Eggs.

I make mine with a few special ingredients
and I think I'll share them with you today.

As long as you promise to never call these delicious eggs
anything but ANGEL EGGS, deal?

Angel Eggs

6-8 hard boiled eggs, peeled, rinsed and halved
1/4 cup to 1/2 cup mayo
2 tsp. creamy horseradish sauce
2 green chilies, cleaned and seeded
1 garlic clove, minced
garlic salt to taste
pepper to taste
paprika, optional

Pop out the egg yolks into a medium bowl.
Smash with a fork.  Now add in the mayo, horseradish,
 green chilies, garlic and pepper. Mix really well. 
 If the mixture is still too dry, add in a bit more mayo.
Sprinkle with paprika if desired.
Store in the fridge until ready to serve.

Now where is that smell button?
Yummy!

If these make it to the dinner table, I wouldn't store them more than 3 days.
When the yolk and mayo start to separate, I'd toss them out!

How do you make your Angel Eggs??

These Eggs shouldn't be made for just the holidays
They should be made year round!

Amy, what a crack up, the girls and I came up with the same conclusion about the name of these eggs. We also thought "Angel Eggs, or Heavenly Eggs" is what they should be named; I love your explanation, and your recipe sounds delicious. I like the idea of the green chills in them. Definitely a wonderful Colorado edition. So nice to see your post this morning. I am missing you all.

Yes, I have had a few of those in my day... I only want to eat angel eggs, no deviled ones for me. Thanks for sharing, simple but one of the easiest pop in your mouth treat during special get togethers! And it is the whipped horseradish condiment that gives it a nice pop.

OOH! Love the addition of horseradish and chilies to make them really pop in your mouth! And I agree, no more eggs with an evil name... angel eggs is much more delightful and fits them better! If there was a smell or taste button, I'd be pushing it! LOL! Hugs to you today my friend :)

Mmmm... I love "Angel " eggs :) I wonder who came up with the name "Deviled" eggs and why... Anyway, these are a favorite of mine, but you know what, I have never made them myself! Crazy, I know :) They always seem like so much work so whenever I have a BBQ and someone offers to bring something I ask if they would like to bring these eggs or potato salad...isn't that just awful of me!
