Hello Friends!
How is your month of February going?
I have been trying really hard to eat more veggies
and I have found it very easy to
put veggies in a one pot meal.
When I can't eat the veggies
I do a green smoothie!
I've been going through cook books
to try and get a bit more inspired
on new recipes and I had found
this one from the Food Network magazine.

I really liked how easy it was to make
and I put in the veggies I had on hand.
She called for baby corn, but I couldn't
find them at the store so I
used fresh green beans instead.
I think you can add in any kind of veggie you and
your family like and it will taste just as yummy!

Amy, You sound just like me about adding veges and making smoothies. We had fried rice with all the ingredients on the weekend and tonight having fajitas with the left over beef. Thanks for sharing; hope you are getting some warmth down your way. Our snow is finally starting to melt; we might get into the mid-60's this week-yeah!

Ooh, this looks so yummy Amy! I have been trying to eat more veggies too, and having a smoothie for breakfast. It feels great to know that you are eating more veggies, doesn't it! Glad that you had a good birthday/Valentine's day! And I love looking through cookbooks to find new recipes as well! :)
I love my veggies! I wish I had when I was a kid growing up but as I have gotten older, I am finding I sometimes would rather eat a vegetable rather than anything else...I actually crave them now! I love a stir-fry of any kind and yours looks delish! Now you made me hungry :) Have a great week, Amy :)
Hi Amy! I just had my dad over for dinner last week, and we served pot roast. A great way to get in all those veggies in a savory sauce. Because my dad is 90, his food needs to count!!
Just got back from Indiana to celebrate my oldest grandchild's 4th birthday. Of course, it was a 'Princess' theme. I told her I'd be the Queen, I think I'm a little past my Princess prime!
Would you pray for me? I have my first ever speaking opportunity on Saturday. I'm giving a Morning of Reflection for the women of my church. I really want to do well!

I do try new recipes on occasion but usually we have our favorites that we like to eat week after week. This looks really good though. Thanks for sharing your version!
