Cranberry Orange Scones...

Hello There!

How are you?  How was your weekend?
What do you all have planned for this week?

We took last week off for Spring Break and it was so nice.
We went to the movies and out for lunch.
We had a few bad days of weather, 
so we stayed in and played games and watched movies.  
We baked cookies for Spring/Easter.
We went to a Good Friday service.
We had a wonderful Easter lunch with friends and family!

Today, we had to take our puppy Daisy
 in for her second round of
vaccinations.  

She's been doing really well and is all ready spoiled.
She gained 3 pounds since the last visit 3 weeks ago.
Here she is, being as sweet and still as can be. ;)

We have friends coming over for a visit tomorrow and then
the rest of the week will be busy too.
We have school to do and well that about it. 
That's enough busy for me!

It's hard to get back into the swing of things
 when we've taken time off.
But, we will get there! Ha!

Any who, thought I would share a quick recipe with you for
Cranberry Orange Scones.
These are very yummy and are perfect 
with a cup of tea, coffee or milk!

Cranberry Orange Scones

2 Cups Flour
1/3 Cup Sugar
1 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Stick Butter, cubed
1/3 Cup Sour Cream
1/3 Cup Orange Juice
1 Egg
Zest of 1 orange
1/4 Cup frozen Cranberries, chopped

Preheat oven 400 degrees.
With a large mixing bowl, mix together the flour,
 baking powder, baking soda, salt and sugar.
With a pastry cutter or your fingers cut in the butter
with the flour mixture until it resembles crumbs. 
Add in the zest of the orange and then make a well at the
center of the mixture and add the orange juice.
Then add the egg and the sour cream, mixing together with a fork.
 Stir in the chopped cranberries until combined.

Place the dough out onto a floured surface and form a round ball.
 Cut in half. Take one of the half pieces of dough,
 form a ball and roll it into a 3/4-inch thickness.
 Cut each ball of dough into eight triangular slices.
Place triangles on the prepared baking pan.

Bake for 12-14 minutes or until golden brown.
Drizzle with a simple frosting if desired.

Makes 16 scones

We are on our second week of spring break. It is going to kill us getting back into the swing of things next week. Both Megan and I have been enjoying the extra sleep in the morning. :)

It's spring break this week for kids around here, including my grand boys and we will be heading to Carolina Beach the day after tomorrow! I wish I could say the weather is going to be good but I see rain in the forecast nearly the whole time...that is until the day we leave for home....GO FIGURE! Your scones sound so yummy and that pup is sooo cute! Hope your week is off to a good start!

Hey, the picture of Daisey is so sweet, she is a cute one! This last week did go super fast and spring time is always a sure bet it will rain or snow!I think I need a few days to relax after days of cooking and going!

Hi Amy, I always remember spring break with fondness-spending time with friends and their kiddos. Love hearing about your days and week; Daisy is such a cutie! So glad she has fit in so well. Our daughter's family pup, Copper, is also doing really well. She is 10 or 11 weeks now, potty trained and growing so fast. Our little Hunter has finally decided she might be o.k., they play tag in the back yard all the time now. Your scones sound delicious and if I hadn't put on a few pounds lately, I would make a batch. Maybe when I get back from our vacation. Sending hugs your way!
