I Love Muffins...


Good Afternoon Friends!

I haven't been blogging for awhile 
and I thought I better get something posted.

I haven't felt very well, so if you could all say a prayer 
for me that would be much appreciated.

Now, for a wonderfully delicious Muffin Recipe!

I Love any type of muffin, sweet or savory.

This muffin is one of my all time favorites,
because Rhubarb is only in season for a little while.
And, I happen to get a few cuttings from mine this year.
So... I made Sugared Rhubarb Muffins.

I hope you give them a try.

Sugared Rhubarb Muffins
1 c. white flour
1 c. wheat flour
1 1/4 c. sugar, divided
2 tsp. baking powder
1/2 tsp. salt
1 egg
1 c. milk
1/3 c. canola oil
1 c. fresh or frozen rhubarb, chopped

In a large bowl combine the flours, 1 c. of the sugar, baking powder and salt.
In another bowl, beat the egg, milk and oil.
Stir into the dry ingredients just until moistened.
Fold in the Rhubarb.
Fill paper lined muffin cups about 3/4 full.
Sprinkle with remaining sugar.

Bake at 350 for 25-30 minutes or until a 
toothpick near the center comes out clean.

Cool for about 5 minutes before removing the muffins to a cooling rack.
Makes: 1 dozen muffins


Mmm..... don't they look yummy?!

Hello Amy, Nice to see an update and I have said a prayer for you. I've never tasted rhubarb but my husband, who is from MI, remembers his grandmother cooking with it. Your muffins look very tasty. Wish I could join you for afternoon tea with a muffin.

My mouth is watering. I love all of your Rhubarb recipes, and I can't wait to give this a try. I love muffins as well... and I have enjoyed the muffins you make on many occasions, so I have no doubt this one will be wonderful.

I am so sorry that you haven't been well. I have had you on my mind and in my pryaers all week. Steve and I will continue to pray for you, and check in to see how you are doing in the next day or two.

I love muffins! I plan some blueberry muffins for breakfast tomorrow. The kids think it is a treat when I make muffins!
