It's Fritter Time!!
Oh my....
These were out of this world GOOD!
Have you ever had a Fritter?
What's your favorite kind to make?
I have been on this "try new recipes"
kick for a while now
and I must say these were a hit!
Chicken Fritters
2 c. finely chopped, cooked chicken
1 tsp. salt
2 tsp. parsley
1 Tbsp. lemon juice
1 1/4 c. flour
2 tsp. baking powder
1 egg, beaten
2/3 c. milk
oil, for frying
In a large bowl, toss the chicken with the salt, parsley and lemon juice.
Set aside for 15 minutes.
In another bowl, combine flour, baking powder, egg and milk.
Stir well to blend.
Add flour mixture to the chicken and mix well.
In a large frying pan, heat about 1 inch of oil to hot.
Drop batter by tablespoons into the hot oil
and fry in batches without crowding for 2 minutes,
until golden brown.
Drain on paper towels and serve.
I made a honey mustard sauce for mine.
Here's my recipe:
Quick Honey Mustard Sauce
1 c. mayonnaise
2 Tbsp. honey
1 Tbsp. Dijon Mustard
Blend together in a small bowl.
Serve as a dipping sauce for the fritters.

Hi Amy! These look so good, and so filling too! I bet your boys love them, and are satisfied after a meal with fritters.
I have only ever had corn fritters, and I've never made them. Your recipe doesn't look too hard to do, maybe I'll give it a try :)

These look delicious Amy. I have never made anything like this. Well, let me say, I have made salmon patties, and tuna patties, and potato fritters, but nothing like this. I can picture it tasting like a chicken nugget; I bet the kids loved them. I will enjoy
trying this out.

YUM! I don't think I have ever had chicken fritters and I ask myself why I have been depriving myself of something that looks so tasty! :)
