Good Morning All!
How was your weekend?
Mine, was wonderful!
My boys were all gone and I had the house to myself.
Went and got my hair done and went shopping with
my mom in law and just relaxed!
Of course now that they are home, they think they need to eat, Sheesh!
So, I have to figure out a meal plan for the week
and then might have to run to the store.
I made up these yummy muffins awhile ago
and thought since it's Monday, I would post it for you all to try.
You just can never go wrong with a little lemon!
It alone brings Joy to my home!
Lemon Pound Cake Muffins
1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 tsp. vanilla extract
1 tsp. lemon extract
1 3/4 cups flour
1/2 tsp. salt
1/4 tsp. baking soda
1/2 cup sour cream
Glaze
2 cups powdered sugar
3 Tbsp. lemon juice
In a large bowl, cream butter and sugar.
Add in the eggs and the extracts; beat well.
Combine the flour, salt and baking soda;
add to the creamed mixture alternately with the sour cream.
Fill greased or paper lined muffin cups about 3/4 full.
Bake at 400 degrees for 18-20 minutes or until toothpick comes out clean.
Cool for about 5 minutes before removing from pan.
Combine the glaze ingredients and then drizzle over muffins.

You are so cute Amy, and you make me laugh. It is nice to get a little "alone" time isn't it? Especially when it is hard to come by. The cupcakes sound wonderful; you can't go wrong with pound cake either (in my opinion). Your boys are very blessed to have you as their Mama. Lemon cake always reminds me of my mother. She had a wonderful recipe for it, and it had the icing on it too. Thank you for that sweet reminder of her today!
