Muffins! Muffins! Muffins!
Good Morning friends! How are you all doing?
Is it warm in your neck of the woods?
Are you still getting snow?
It's been rather warm here and we aren't sure
if we need to start watering the trees and grass.
Saturday we had a high of 79!
And of course we got that wonderful wind with it.
That's why I think we are approaching Spring here...
Spring wind...
Warmer weather...
Little bits of green sprouting from the ground...
Since it's still a bit chilly in the mornings
I have to light a small fire in the wood stove
or bake to heat up the house.
So, today I chose to bake a little
something and share it with all of you.
Who here loves a good muffin?
Who loves Chocolate?
Oh ya...that's what I'm talking about...
Chocolate Chip Muffins!
Here's what you'll need:
2 cups flour
1/2 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1 egg
3/4 cup milk
1/3 cup oil
3/4 cups chocolate chips
Combine your first for ingredients. Beat egg, milk and oil.
Stir in the dry ingredients just til moist.
Fold in chocolate chips.
Fill paper lined muffin cups 1/2 full.
Bake at 400 for 18-20 minutes.
Cool for 5 minutes before removing to a wire rack.
Makes 12 muffins

I haven't made chocolate chip muffins in years. Yum! We had a spring tease this weekend with temperatures reaching almost 70*. This morning we are back down in the 30's. I keep telling myself it won't be long!

Hi Amy, Those muffins look so good and seem so easy to make. Due to the fact that I am gluten free, I tend not to bake very often. I have lots of recipes that I can change or that are g.f., but it helps not to have food around that will add lbs to my scale. Hope you have a great afternoon; sounds like you've had really warm days-today we are in the 60's, but that wind really cools you off besides nearly blowing you away. I stocked up on canned goods for the basement,just in case we ever find ourselves facing a tornado again.

Wow, 79 degrees! My goodness! I think the warmest it has gotten here so far has been 51 degrees. And we are still getting plenty of rain, and while it is a bit dreary, I am still thankful for the moisture!
Your chocolate chip muffins look absolutely scrumptious! I have printed off almost every recipe you've posted on your blog... and love them! I am going to try this recipe. My kids love choc chips, and this would make a great breakfast treat.
