I love anything that is simple yet elegant when completed.
Quiche is one of those foods that you can add anything in it and they always turn out yummy.
And, sometimes you can just have a simple one like a veggie meal all in one dish.
Veggie Quiche
3 cups shredded potatoes
3/4 cup diced onions
1/2 cup diced celery
1 carrot, shredded
5 mushrooms, washed and sliced
1 garlic clove, chopped
1 cup shredded cheese
2-4 Tbsp. Oil
6 eggs, beaten
salt and pepper to taste
Preheat oven to 350 degrees. Grease 2 muffins pans, set aside.
Saute the potatoes, onion, celery, carrot and mushrooms in oil until tender. Remove from heat. In large bowl beat eggs, garlic, salt and pepper.
Mix in cheese. Stir into potato mixture.
Pour into prepared muffin tins.
Bake for 30 minutes or until golden brown.
These are delicious and simple!

Those little quiches looks wonderful. I like them in the muffin pans. I bet they would be good for breakfast, lunch or dinner.
The potatoes are a great addition, something I hadn't thought to do. I think they would be nice to make for Steve's lunches.
