Zucchini Boats



What do you do with loads of zucchini?
 
Make Zucchini Boats of course!
 
And, this has got to be one of the best ways to eat your veggies.
 
 
 
Zucchini Boats
 
 
2 zucchinis, washed and cut in half
 
1 box of stuffing mix
 
1 package Italian sausage
 
2 sliced tomatoes
 
 1/4 cup Parmesan cheese
 
1/4 cup cheddar cheese
 
4 Tbsp. Italian bread crumbs
 
salt and pepper to taste
 
 
 
First preheat oven to 375 degrees.  Cut your zucchini in half and scoop out the pulp. 
 
 Boil your zucchini in a large pot of water for approximately 3-5 minutes or until zucchini is soft.
 
 Prepare your stuffing mix according to package directions.  Set aside. 
 
 In a large skillet cook your sausage until fully cooked and golden brown.  Stir in the stuffing. 
 Mix in the cheddar cheese.
 
Spoon a good portion of the sausage stuffing mix into each half of the zucchini.  Place into a lightly greased baking dish.
 
Now, sprinkle on the Parmesan cheese and top with the sliced tomatoes. 
Sprinkle with the bread crumbs and the salt and pepper.
 
Cover with foil wrap and bake for 30-35 minutes, take off the foil
and bake another 10 minutes or until
cheese is melted and heated all the way through.
 
I ended up making my own version of this after looking at numerous recipes for these.

Oh Yummy Amy,
I have a couple of recipes a little like this, but I haven't made them in years.... its time to make them, I think; your making me hungry. Perfect thing for the zucchini abundance!

Hi Amy! What an inventive idea! One year, we had so many zucchini, I was making breads right and left. I wish I had this recipe then.

This looks like a real crowd pleaser! I think I'd use ground turkey though. Gotta watch my cholesterol, darn it.

Amy, I really think these are the way to go with a ton of zucchini every summer. LOL
Try it with a baby pumpkin this Fall.
