Chicken Pot Pie Soup...


This is such a perfect soup for cold and snowy days...
Well, actually I can eat soup any time of year!

This is a very creamy soup and the homemade pie crust bites, 
they add a nice touch of crunch all the way to the bottom of your bowl!

I bet you can't eat just one bowl!
Yeah.. it's that good!

Chicken Pot Pie Soup 
(With Homemade Pie Crust Bites)

2 c. cooked chicken
3 Tbsp. butter
1/2 onion, diced
3 celery stalks, chopped
1 c. broccoli, chopped
1/4 c. flour
3/4 c. chicken broth
1 c. heavy cream
1 c. milk
1 clove of garlic, chopped
pinch of red pepper flakes
1 tsp. salt
1/2 tsp. pepper
1 c. shredded cheese
pie crust dough

In a large pot, melt the butter.  Add in the onions, celery, broccoli, garlic and cook until soft.
Sprinkle with flour and cook an additional minute, stirring constantly.
Slowly add in the broth, heavy cream, milk, red pepper flakes,  
salt and pepper, using a whisk to combine.
Stir in cooked chicken.
Heat over medium heat for about 15-20 minutes.

To make your pie strips, roll out your dough and cut into strips 
and lay onto a baking sheet.  Bake at 450 for 6-8 minutes or until lightly golden brown.  

Pour soup into mugs and top with cheese and pie crust bites.

It's Mmm, Mmm Good!

It sounds delicious. I have been wanting to make this ever since I heard you talk about a little while back.
Such a great idea; You could even make extra pie crust bites and freeze them for a quick grab the next time you wanted to make this soup.
