Pizza Cups...




We have had some unusual weather here 
in Colorado these last few weeks.

One days it's freezing cold 
and the next day it feels like summer.

We got some much needed rain 
mixed with a bit of snow
and now everything is wet and soggy!

I am not complaining, 
I am thanking Jesus for the moisture!

Keep on sending the rain,
 Lord for we so need more!

I have been trying to come up with some 
new and different recipes to use
and I found this one and I thought 
I would share it with all of you.

My boys said I get an A+ for this easy dish!

Yay! 
 I must been doing something right!


Pizza Cups

1 tube biscuits (preferably Grands)
pepperoni or favorite meat topping
1/2 c. pizza sauce
1 1/2 c. mozzarella cheese
dried oregano, optional

Preheat oven to 375. Spray a muffin tin with cooking spray.
Remove biscuit rounds from the tube and slice in half horizontally 
and roll out each piece, thin.
Size should be large enough to go up the sides of the muffin tin.
Place into the greased pan and shape to fit.
Repeat with remaining dough.  Bake for 5 minutes.
Remove from oven and cool slightly.  
Now top each crust with filling of your choice, 
2 tsp. pizza sauce, cheese and the oregano.
Bake until the crust is browned and the cheese is bubbly, about 5-7 minutes.
Wait about 5 minutes before removing them from the muffin pans.

*You can also try making your own pizza crust 
or a biscuit dough instead of actually using the Grands biscuits.


I wish I would of made a double batch,
 these went rather quick!

These look delicious Amy; definitely up my alley and this month, as you know, I've been cooking up mini meals like this for the freezer to have handy. Eddie will love these. We all will.

As for my "Green Chocolates", you don't even taste the avocado, it just adds a creamy element to the chocolate. The truffles are a soft chocolate. Have you heard from Rox? When is she due back? I am looking at your bread and butter on previous post as I write this, and it is making my stomach growl… better go get my dinner going.

Amy, these look great and I can imagine hungry boys eating these. We don't get biscuits in a tube in Australia so I would need to use pastry or bread as a substitute.

My brother and his family live in Colorado - so glad to hear there has been rain.
