Just taking a break from cleaning and organizing
to tell you about a really simple cookie recipe.
My dear friend gave me this cookie recipe
about a month ago
and I must admit that I have now
made these cookies 3 times since then.
They are so easy and so quick to make and
Yes they are Gluten Free!
(I don't eat everything GF, but love to try new recipes that are)
Gluten Free Peanut Butter Cookies
1 cup peanut butter or other nut butter
1 cup brown sugar
1 egg
1 tsp. baking soda
1/2 cup chocolate chips
Preheat oven to 350. Mix together in a bowl.
Place on cookie sheet and bake for about 9-10 minutes.
Cool on pan for a few minutes and then transfer to a cooling rack.
I added a handful of oatmeal to mine,
but you can use whatever you'd like.
I also made a batch using almond butter
instead of the peanut butter
and they turned out just as yummy!
Oh and I must warn you that you won't be able to eat just one!

This is just what the doctor ordered! My daughter has been gf for the last year and I was craving a cookie as of late and haven't experimented too much in that area yet. Will try these this weekend! :)
