I got a wonderful deal on 36 pounds of strawberries
so I have been slicing and dehydrating
making freezer jam, cutting and freezing
and baking scones!
My house smelled so delicious for about 4 days!
I just love the smell of strawberries, don't you?
The strawberry scones were a huge hit
as they taste just like strawberry shortcake
all in one bite!
Who'd you like the recipe?
2 cups flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 stick cold butter, sliced
1 egg
1/2 cup yogurt or half and half
1 cup diced strawberries
Preheat oven to 400 degrees.
Combine the dry ingredients into large bowl.
In a small bowl, stir together the egg and the yogurt, set aside.
Now in the flour mixture, cut in your butter until you have coarse crumbs.
Pour in your egg/yogurt mixture and stir till combined.
Fold in your strawberries. Dough will be sticky.
Place dough onto a floured surface.
Divide dough into 2 portions and form into a circle.
Cut each circle into 8 wedges
Place on cookie sheet and sprinkle
the scones with additional sugar.
Bake for 12-15 minutes or until golden brown.
I store my scones in the freezer
and then pull a few out at a time.
I have also used this recipe for my
blueberry, blackberry and raspberry scones!

OOH, I do so love strawberries, and any recipe you share, I print it off. My family always loves your recipes, because I know they are tried and true! I have a huckleberry cheesecake that I just made that we are eating now, and then I think I will make these scones. 36 pounds of strawberries -wow, that is a lot of strawberries! There is just nothing in the world like fresh strawberries, oh yes, the smell is glorious! Feels good to get it all put up to enjoy through the winter! :)
