Chocolate Cookie Truffles

HAPPY VALENTINE'S DAY!!!!!

I have just the PERFECT Valentine's Day goodie for you all!!
AND.......It's Simple to make:

Chocolate Cookie Truffles

1 package Oreo cookies-crushed
1 bar Cream Cheese
1 bag Milk Chocolate Chips
1 dollop Shortening or Coconut Oil
1 bag of mini baking paper cups
1 small Valentine Tin or another one of choice

In a large bowl combine the crushed Oreos and cream cheese. Mix well
 {I used my hands to mix them both, so they were well combined}
Roll into about a walnut size ball and set on wax paper
Once balls are all rolled out, put them into the fridge
until they aren't sticky to touch, about 30 minutes or so.
Melt the chocolate chips and the shortening in a small saucepan.
Pull out your cookie balls and dip each one in the melted chocolate. Place the dipped balls back onto the waxed paper and set back in fridge till the chocolate hardens.
After the truffles are hardened, take off wax paper and place them in mini baking paper cups.
Store in a cute Valentine's Tin or a Tin of your choice.
These are extremely rich, but oh so good!!
ENJOY!

LOVE.......
it begins with a moment that grows richer and brighter.....
and becomes a lifetime of JOY!

Many Blessings,
Amy

I have made these.... and they are so, so, wonderful!! I was just thinking about them yesterday and wondering if I should make them, but afraid I would eat them all, and I don't want to tempt myself like that!!! If I still had many little ones around as you do, I know it would be safe, then I would know they would be consumed before I ate them all he he. Happy Birthday Amy.... I hope it is an extra special Birthday for you, because you are extra special.

P.S. I am making a roasted chicken tonight in my cast iron for a lovely romantic dinner for Steve (Eddie will be away to a game until 11:00, so we actually have an evening to ourselves (its been a long time since we have had a quiet Valentines Dinner to ourselves at home hehe). Thanks for the Roast Chicken Idea... I like it roasted, and the cast iron sounds like the perfect way to do it.

Love you,

Pam
